Hi Ben,
it is possible to fix a second Braking Disk into a G/S Fork, I used a second Disk from a r100CS made an adpting plate from the disk to the front axle and fixed a second caliper also from a R 100 CS on the left side, there you must also fix adapters on your own. In addition two braking pipes an a change of the braking cylinder to 13mm and it works. Costs about 400€. There is not much space in the G/S Fork, use it.
